Another dish that I love to make from time to time are these delicious breakfast bowls that are paleo friendly! I never liked the taste of sweet potatoes until I became gluten-free / grain-free at the start of 2020. Fast forward to present day and they are now my absolute fav – apparently this is an unpopular opinion but they are sooo delicious! And I love that they can go with breakfast, lunch or dinner with the help of a few extra ingredients. 

There are no rules with these breakfast bowls and you can include whatever you’re craving on any given occasion. Check out the recipe below:

Ingredients

1 large sweet potato (or 2 medium sized ones)

2 turkey sausage links (if desired – I make the bowl with or without!)

1 banana or apple (or any other fruit of your choice)

Spinach leaves

Olive oil

Cinnamon

Honey

Directions

Steam 1 sweet potato then dice up into small pieces. Place pieces into the oven or a pan to cook until potatoes are browned as desired.

While the sweet potato is in the oven, cut turkey sausage links into smaller pieces and cook in a pan on medium heat with olive oil until sausage is cooked through. Note: The photo below does not have sausage in it. But I prefer to include on most occasions!

Turn off stove and add sweet potato chunks to pan and mix with the cooked turkey sausage pieces.

Add a desired amount of spinach to the pan and mix well. Or add spinach directly to serving bowl if you wish to keep the leaves fresh and avoid them welting before serving.

Add spinach, sweet potato and sausages to a bowl. Drizzle honey on top as desired. Then add pieces of fruit and sprinkle a bit of cinnamon on top to finish.
